It’s getting to be that busy time of the year already when the lunchbox gets boring and unhealthy because it’s hard to think up new yummy ideas for snacks when you’re busy. Well, I made these this afternoon and they were yummy. I know they look totally boring but they are worth a try because they are so easy and fast to make. They use wholemeal flour and not much added sugar. It’s amazing what ideas you can come up with when you switch to wholemeal and try to reduce sugar. They are also egg free, dairy free and almost fat free, WHAT!? I know it sounds too good to be true but they really are delicious. Here’s how I made them;
I combined a tin of crushed pineapple in natural juice, no added sugar, no artificial colouring etc., with 2 cups of wholemeal self-raising flour and 1/4 cup of sugar. If the mixture is super dry just add a little water to get a smoother consistency. Mix it all gently with a spoon and then spoon the mixture into 24 lightly greased mini muffin tins and bake for around 10mins on 170 degrees Celsius or until cooked through and just slightly browning on top. If you want to make them pretty you could ice them but I wanted to be able to eat them without feeling too guilty. They can be frozen for the lunchbox too. Seriously fast to make and a great bit sized, cheap snack. Are you going to make these?
