Triple chocolate brownies


I love baking for gifts and parties so I thought I would share one of my go to favourite recipes; triple choc brownies. I like to bake these and wrap them for gifts, take them to ‘bring a plate’ afternoon teas or serve them with ice cream and strawberries as a dessert. I usually make a double batch so I can freeze some brownies for another day but I have included the recipe here that fits into a 28x18cm slice tin. This recipe is really quick to mix and is super dense like a good brownie should be, don’tcha think?

200gm Dark cooking chocolate, chopped

200gms butter, chopped

1/2 cup baking cocoa

1 & 1/2 cups of castor sugar

3 eggs

1/2 cup plain flour, sifted

1/4 cup self raising flour, sifted

150gms white chocolate, chopped

extra nuts are optional

Line the slice pan and preheat oven to 160-170 degrees C. Melt dark chocolate and butter on low in the microwave for a minute or two in a microwave safe bowl and stir until smooth. Stir in cocoa and sugar and let cool slightly before adding the eggs one at a time and mixing well after each one. Stir in the sifted flours and then gently fold through the chopped white chocolate. Poor mixture into lined pan smoothing it evenly. Bake for 30-50 mins depending on the oven and personal preference for fudginess. I cook mine until a skewer almost comes out clean from the middle. Allow to cool in tray and then refrigerate. Dust with icing sugar or cocoa before cutting into squares. Store in fridge or freezer. It’s even better the following day 😉
