Hello! Here’s another recipe for your slow cooker. Put it to good use over summer and get out there!
These slow cooked Italian meatballs are very popular with Mr T and have been compared to the ones you get in a meatball sub. Here’s how I make them!
I process the veges in the food processor. Onions, garlic, carrot, herbs, whatever you like really. Then add some breadcrumbs or almond meal and two eggs. Add salt and pepper as desired, remembering that there is salt in the sauce too. Mix the mince and everything together evenly. Pour a jar of pasta sauce into the bottom of the slow cooker and roll heaped tablespoons of mince into balls. Place the meatballs into the pasta sauce, putting them in nice and close so you can make a single layer of meatballs in the base of the slow cooker. Cook on high for two hours and then reduce to low for 4-6 hours or start on low and cook on low for longer or until cooked through. Give them a gentle stir after a couple of hours of cooking to coat the meatballs in the sauce. Top with some fresh parsley and serve with pasta, rice, veges or salad. Yummo!
